this project program is the same as yours every day to protect the health and well being of the young children in your care. we want children to learn abut how food is grown and where it comes from by supporting local agriculture. we want young children to eat more fruits and vegetables and develop lifelong healthy eating habits. young children especially those under ۵ years of age are at greater risk of foodborne illness. our objective is to reduce the risk of foodborne illness when using fresh produce and when engaging in farm to preschool activities. ۲ overview benefits of incorporating farm to preschool programs fresh produce and risk of foodborne illness food safety for the kitchen and classroom ۴ key food safety messages fruits and vegetables recommendations for preschoolers ۱ to ۱.۵ cups of fruit ۱ to ۲ cups of vegetables make half your plate fruits and vegetables show the myplate for preschoolers. discuss the myplate recommendation to make half your plate fruits and vegetables and how that relates to the children in their center. ۴ fruits and vegetables do most preschoolers eat the recommended amount of fruits and vegetables how many exposures needed to overcome fear ۳ to ۵ ۴ to ۸ ۵ to ۱ ۶ to ۱۲ ask participants do most preschoolers eat the recommended amount of fruits and vegetables no most to not eat enough – that is why it is so important for early childcare centers to find creative ways to expose children to a wide variety of produce and to teach children which foods to eat for a healthy diet. children often dislike trying new foods. neophobia is the fear of new things or experiences or in this case new foods. ask participants how many exposures may be necessary for young children to overcome this fear. review the response options in the slide. research suggests it takes between ۵ to ۱ exposures to a new food for a child to accept it. starting or expanding a farm to preschool program at your center is an excellent way to bring more fruit and vegetables experiences to young children. ۵ farm to preschool activities what farm to preschool activities do you implement at your school list participants’ responses on a flipchart if possible. ۶ best practices for implementing farm to school incorporate local produce into meals and snacks plant a garden at your school provide hands on nutrition education centered on fruits vegetables and food safety practices many early childcare centers bring local fresh fruits and vegetable into their classrooms and kitchens but don’t formally call what they do a farm to preschool program. however you identify your program here are some best practices to keep in mind. ask participants to take out the best practices handout from their packet. review the ۷ best practices listed here. discuss. ask participants to complete the best practices form as you review it. what are some ways you can incorporate local produce into meals and snacks suggested ways taste testing cooking demonstrations feature a new fruit and or vegetable each week story time send recipes home. plant a garden at your center. include children when planting watering harvesting. create an activity chart assign children to each activity. provide hands on nutrition and food safety education. for example how to wash hands how to wash fruits and vegetables before eating or include fresh produce in cross curricular education. ۷ best practices plan a field trip to a farm take the children to a farmers’ market hold a harvest festival invite a farmer to visit your classroom plan a field trip to a farm. foodborne illness why are young children at greater risk for a foodborne illness which foods pose the greatest risk for children now let’s talk about foodborne illness and the risks associated with fresh produce. we will define foodborne illness talk about why young children are at greater risk for foodborne illness and review which foods pose the greatest risk for young children ask participants what foodborne illness outbreaks related to produce have you heard about in the media ۹ foodborne illness defined foodborne illness illness caused by eating food that is contaminated three types of contaminants chemical – cleaners pesticides physical – glass wood bandages fingernails biological – bacteria viruses parasites fungi pathogens foodborne illness is caused by eating food that is contaminated by harmful microorganisms. these harmful microbes are called pathogens. pathogens are so small they can only be seen through a microscope. there are three types of contaminants biological which includes viruses bacteria parasites and fungi. they are present in air soil animals and humans. chemical contaminants can come from unsafe and hazardous pesticides leaching from metal or plastic containers not approved for use with food or kitchen or household cleaners. physical contaminants include objects such as glass wood metal fragments bandages fingernails and hair. today we
